Fish Salad

Okay gang, so this recipe is super easy and really simple but let me give you a bit of a back story. I am notorious for changing my mind at the last minute in the kitchen and wasting food. The food usually gets wasted because I've switched ingredients or decided to spend a few days eating out and then the food I bought for the week either just sits there or goes bad. This afternoon I was overly hungry after a workout and I didn't want any fast food. So I had to use what I had in the house and figure it out.
Let's jump right in!
For the rockfish:
After rinsing and drying it, I seasoned it with salt and pepper and a little garlic powder. I heated my pan to medium high, dropped in some veggie oil and once the pan started to smoke, I laid the fillet away from me and let it brown on each side for about 3-4 minutes until it was done to my liking
For the salad:
I just happened to half about a 1/2 bag of spring mix, pomegranate seeds, Kumata tomatoes, 1/2 grapefruit, sun greens, broccoli sprouts, an edible flower and some BURATA! I seasoned the whole thing with salt/pepper and added the rockfish on the side of it and voila! A ready to eat salad with random fridge ingredients.
The point of this post is to show an example that you can literally make something out of what you think is "nothing" in your refrigerator. This is the result of my "nothing", enjoy!
