Apricot Squares Recipe!

Hey gang! I’m back with a new recipe for y’all, APRICOT squares. Yes I said apricots! I used to love them as a kid and I still do. I decided to make a dish using seasonal fruit and apricots are in season. Let’s get straight into this recipe, I don’t want y’all talking about me like y’all do the rest of the food bloggers who write these long ass dramatic stories about the food LMAO!
INGREDIENTS: (For the apricot jam)
8 apricots
2/3 cup white sugar
Cap full of vanilla
1/2 cup water
1 TBS Cornstarch
Pinch of salt
INSTRUCTIONS: (For the apricot jam)
1.) Wash, pit, & cut apricots into halves
2.) Pour all ingredients EXCEPT CORNSTARCH in a medium sauce pot and turn heat on medium high
3.) Cook until it apricots come to a boil
4.) After about 10 minutes use a potato masher to mash the apricots and turn the heat to low
5.) Add cornstarch, stir, and cook apricots until the mixture thickens and resembles jelly
6.) Remove from heat, cool and then transfer to a jar for later usage
INGREDIENTS: (For the squares)
2 pie crusts
1 cup brown sugar + (2-3 TBS for dusting)
1 cup flour + (2-3 TBS for dusting)
1 cup (2 sticks butter)
1 cup almonds
Pinch of salt
For the squares:
1.) Pre-Heat oven to 350 degrees
2.) Line a baking dish with with foil and leave a little to hang over for easy removal of the squares, and a store bought pie crust
3.) Dust (sprinkle) about 2-3 TBS of brown sugar and 2-3 TBS of flour on top of the pie crust
4.) In a bowl mix together flour, butter, brown sugar & almonds together to make a crumble
5.) Spread apricot jam evenly across the pie crust
6.) Add the crumble (flour/butter/brown sugar/almond mixture) on top of the apricot jam
7.) Take the 2nd pie crust, cut into strips and weave the strips on top of the crumble
8.) Beat 1 egg and brush over the top of the weave
9.) Bake at 350 degrees for 25 minutes
10.) Lift foil and remove square and let cool for 45 minutes and cut into squares
11.) Eat that shit!
