Black Eyed Peas Recipe!

Happy New Year guys! I hope everybody brought in the new year with family, friends, or the ones you loved.  I was asleep on the couch and Austin has been in Dallas with his dad. Anyway he is back and so that means I’m back in the kitchen with the heavy duty cooking.

When Bear is gone, I basically eat like a bird.  It’s usually my time to recharge, regroup, and get my eating back on track. I have been trying to maintain my current weight and still be fine by my birthday (January 9th), and I have done a pretty damn good job this year.  Anyway, now that Bear is home I finally got a chance to make my New Years Day BLACK EYED PEAS HONEY! I just taste tested them right before writing this post and I am honestly trying to hurry and finish this so that I can go eat. Let’s get straight to it!

Ingredients:

1 bag black eye peas (soak in water over night)

1 onion

1 1/2 quarts of water

1 LB smoked meat

1 LB smoked sausage

3-4 bay leaves

3 TBS canola oil

Onion powder

Garlic powder

Garlic salt

Seasoning salt

Black pepper

1 1/2 sticks of butter

*NOTE* I didn’t give you guys measurements for the seasonings because I literally season these to taste.

Instructions:

1.) Heat a pot on medium heat and add the canola oil

2.) Rough chop the onion, add to the pot along with the garlic

3.) Once the onions and garlic become fragrant (start smelling good), add the smoked meat and sausages

4.) After about 3-4 minutes and then add the water, bay leaves and seasonings

5.) Next add the black eyed peas and 1 stick of butter

6.) Add the lid to the pot

7.) Let black eyed peas cook on low until they are tender or for about 3 hours staring every 45 mins.

8.) When the black eyed peas are almost done, add the last bit of butter.

9.) Serve over rice as the main dish, or eat them as a side dish to pork chops and cabbage

So there you have it! Super easy and your pot or crock pot does the work for you.  Notice I didn’t add measurements to the seasonings because I want you guys to get in the habit of learning to cook without needing measurements for every little recipe. I hope this recipe brings you peace, joy and blessings all year round. Me and bear are about to dig in!  Thank you for stopping by, Until Next time,

With Love & Food,

-Chef Morghan
