Drunken Mussels Recipe!



 

Happy Valentine's Day lovers! I can't remember the last time I had a Valentine and I had planned to take myself out for dinner. But, instead of taking myself out to dinner for Valentine's Day, I decided to stay inside and cook what I would've gone out and ordered. I would've ordered a white wine creamed pasta with mussels in it with chili flakes. Talk about fancy, but inexpensive and delicious then this is your dish. I topped it with some fresh parsley and man oh man was that the perfect garnish. Believe it or not this meal comes together rather quickly. Boiling the noodles is really what took the longest. Let's get straight to recipe!


Ingredients:

2 lbs live back mussels cleaned and beards removed just prior to coking

2 Tbs oil

2 cloves garlic minced

4 Tbs butter cubed

salt/pepper to taste

1 cup white wine

1 cup heavy cream

1 tsp red chili flakes


1.) Boil water on high heat, add noodles and turn the heat down to medium high until al dente, then drain and set aside.

2.) Place oil in a heavy bottomed pot on medium high and sweat onions and garlic

3.) Add white wine and mussels then cover with a lid for about 5 minutes. Uncover to check and see if the mussels have opened and cover and cook for about 2-3 more minutes

4.) Pour in cream, red chili flakes, & salt & pepper and mix well

5.) Add noodles, mix well again

6.) Garnish with parsley and serve with bread if you'd like.


I promise you guys this recipe is so easy and comes together so quickly. Don't be afraid to try working with seafood, it's honestly easier to cook than poultry and/or beef. Until next time,
