Ultra Blueberry Pancakes

Fun fact about me, I will eat any baked good that has blueberries in it which includes, cakes, muffins, breads, pies and especially, pancakes. Believe it or not, these pancakes were made from my favorite pancake mix (if I don't make them from scratch I'll always tell you), Aunt Jemima Original Pancake Mix. That mix is my go to when I'm feeling lazy or pressed for time and on this day I was experiencing BOTH. I remember making these on #NationalPancakeDay. I was looking at the National calendar and realized I also needed content for my food page, so I jumped up used the blueberries that I already had in the house and of course this mix on deck.


Lets get into these!


Ingredients:


1 box of Aunt Jemima Original pancake mix

water

2-3 eggs (depending on which original mix you get)

1-2 caps full of oil

2TBS butter

1 TBS of vanilla

1tsp of cinnamon

1 cup of fresh or frozen blueberries

whipped cream

powdered sugar


For the pancakes:


Make pancake batter according to the directions on the back of the box. Next add vanilla, cinnamon, and sugar. lastly gently fold in fresh or frozen blueberries. Then heat a cast iron skillet or griddle to medium heat. Put about a cap full or two of oil in it for pancakes with crispy edges, for fluffy pancakes use butter to grease the skillet or griddle. Pour in about 1/3 cup of batter or a 1/2 cup (depending on how big you want your pancakes) onto the heated surface. Once you see little bubbles pop around the edges of the pancake, its ready to flip (about 2-3 mins on each side).


Once all the pancakes are done, butter each one, stack them, dust with an infinite amount of powdered sugar, top with whipped cream and more blueberries, and douse in maple syrup! You better know what to do after that!


One thing you will get to know about me is that every single thing I make is not from scratch. Why might you ask considering I'm a trained chef with the ability to do so? The answer is simple, I am still human and most importantly a MOM. I do not always have time to make something from scratch, nor do I always feel like it. The average person is NOT making pancakes from scratch because they don't have to. But just because its not made from scratch that does not mean your food won't taste as good as though you had made it from scratch nor does it mean you can't still have fun with recipes and cooking. These are pancakes that anybody can make and recreate with other fruits and toppings because the bulk of the work is done for you. Cooking should be fun, especially if you are just someone who enjoys cooking and feeding their family. Whichever style cook you are, there will always be a place in Morghan's Kitchen just for you.
