Vegan Waffle Recipe!



 

Hey gang! Just wanted to share this super easy, super tasty vegan waffle recipe. I have been getting into learning about the vegan culture. It seems to be a pretty popular wave goign on right now via the news and social media. My friend Ify (who is more like a sister to me), just recently left to go play professional basketball in Turkey a couple of weeks ago. She and I try to catch up whenever we can because she is literally always out the country and I am usually out of state or busy with Austin when she is home.


Our schedules finally aligned with one another a few days before she was set to leave and we were able to set a date to hang out. I decided to surprise her with a yummy healthy breakfast considering she needs to fuel her body with hgih quality foods to stay in shape. I made her the vegan waffle pictured that is topped with greek yogurt, honey, blackberries, and cinnamon roasted almonds, then lightly dusted with powdered sugar. To say the least, Ify was super excited to have me cook for her since she misses out on all the food because of her job and schedule. She said they were soft and yummy like I knew they would be. Let's get straight to the recipe!


Ingredients:

1 cup whole wheat flour

1 cup almond milk (soy or other nut milk is okay)

1 tsp baking powder

4 TBS sugar

1 cap full vanilla

pinch of salt

1 TBS cinnamon

2 TBS vegetable oil or vegan butter


*NOTE: with my waffle maker this recipe makes about 3-4 waffles. I use the Black & Decker double flip waffle iron which is available at Target for $39.99.*


Instructions:

1.) Mix all dry ingredients

2.) Add wet ingredients to the dry and whisk together

3.) Prepare waffle iron as instructions state

4.) Plate and top with your favorite topping (fruit, nuts, whipped cream etc.)

5.) Serve and Eat
