Purple Sweet Potato Pie Recipe!


 

Babbbbyyyyyyyy YES! I know what some of you all are thinking, how in the fuck did she just make a purple sweet potato pie?! Well I'm here to tell you that you prepare it the same exact way yall mama's and grandmamas taught you guys how to make regular sweet potato pie. These apparently are in season right now and they hail all the way from Japan and are a staple in Filipino food. You may have seen it somewhere dubbed as "Ube". So many Ube dishes and treats are created from this purple sweet potato such as pies, donuts, and smoothies. The ingredient to me that brought this pie together was the can of evaporated milk I used.


Ingredients: (Makes 2 pies)

2 Pie crusts (store bought it fine)

2 LBS purple sweet potato ( 2 large ones)

1 can evaporated milk

3 eggs

cap full of vanilla

1/2 cup brown sugar

1/3 cup granulated sugar

Pinch of salt

Hella shakes of Cinnamon

1/2 tsp ground ginger

1/2 tsp ground cloves

1/2 tsp all spice

1 tsp nutmeg


Instructions:

1.) Pre-heat the oven to 400 degrees, poke holes all over the sweet potatoes, place them in a baking dish and roast them until you can stick a fork through them about 45-50 minutes or so, then turn the oven down to 375

2.) Take the sweet potatoes out of the oven, let them cool a bit and peel the skin off

3.) Place them in a food processor with all of the ingredients and blend, blend, blend until extra smooth

4.) Pour some melted butter in the bottom of the pie crust

5.) Pour half of the mixture in one pie crust and do the same for the other and spread evenly with a rubber spatula

6.) Bake on 375 for about 35 minutes or until a fork comes out clean

7.) Let cool, slice and then serve with ice cream or whipped cream


I dare you guys to try this recipe and wow your family with something NEW! I promise it tastes the same as a regula sweet potato pie if you can get passed the fact that it's purple. Until next time,
